Cozy Veggie Bean Soup

🍽 Servings: 5 🕓 Prep Time: 15 mins 🕓 Cook Time: 1 hour

 

INGREDIENTS

◦ 2 carrots, chopped in small cubes
◦ 2 big celeri branches, chopped in small cubes
◦ 1 yellow onion, chopped finely
◦ 1 medium potato, chopped in small cubes
◦ 1/2 turnip, chopped in small cubes
◦ 1 leek, chopped finely
◦ 2 garlic cloves, chopped finely
◦ 2 tbsp extra virgin olive oil
◦ 1 tbsp dried parsley
◦ 1 tbsp dried basil
◦ 1 tbsp dried oregano
◦ Pinch of salt and black pepper
◦ 3 bay leaves

◦ 5 cups vegetable broth low in sodium
◦ 1 can 19oz mixed beans, drained and rinsed
◦ 1 can 19oz white beans, drained and rinsed
◦ 1 can 26oz crushed or diced tomatoes (for a more creamy consistency, do half tomato sauce and half diced tomates)

INSTRUCTIONS

1. In a big pot, add your oil, all your veggies and your seasonings and cook on medium-high heat for 5 minutes.

2. Add your beans, tomato sauce and vegetable broth and mix with a wooden spoon.

3. Cover and cook on low-medium heat for about 1 hour, or until the veggies are cooked and tender. Stir the soup occasionally.

4. Serve alone, with crackers or with toasted bread.

Refrigerate up to 5 days.
