Squash & Bell Pepper Soup with Roasted Chickpeas

Warm up with a delightful bowl of Squash & Red Pepper Soup, perfectly balanced with the crunch of crispy chickpeas. This comforting recipe not only bursts with flavor but also brings a splash of vibrant color to your table!

INGREDIENTS
β¦ 1 butternut squash, cut in half
β¦ 2 carrots, grossly chopped
β¦ 1 red bell pepper, chopped in half
β¦ 1 cup cherry tomatoes
β¦ 1/2 yellow onion, grossely chopped
β¦ 1 whole garlic bulb, top cut off
β¦ 2 tbsp avocado oil
β¦ Pinch of salt and black pepper
β¦ 2 1/2 cups vegetable broth
β¦ 1 can 19oz white beans, drained and rinsed
β¦ 1 tbsp turmeric
β¦ 1 tbsp nutritionnal yeast
β¦ 1 tbsp parlsey, fresh of dried
β¦ Salt to taste
Toppings
β¦ 2 cups roasted chickpeas, store-bought or make my Smoky Crispy Chickpeas
β¦ 4 tbsp pumpkin seeds
β¦ 4 tsp dairy-free cream
β¦ Sprinkle chili flakes
INSTRUCTIONS
1. Preheat the oven to 400F.
2. Add the vegetables on a large baking tray, top with avocado oil, salt and black pepper and cook for about 40 minutes or until the vegetables are tender.
3. Once itβs cooked, scoop the inside of the squash and squeeze out the garlic from the bulb add them to a high-speed blender, along with the other vegetables. Add the other ingredients and blend until you get a smooth texture.
4. Divide the soup into 4 servings, top with 1/2 cup roasted chickpeas, 1 tbsp pumpkin seeds, 1 tsp cream and a sprinkle of chili flakes. Can be served with toast bread of choice.
Refrigerate up to 5 days.
