INGREDIENTS
β¦ 5 tbsp water
β¦ 2 tbsp ground flaxseeds
Caramelized apple
β¦ 1 cup apple, peeled and finely chopped
β¦ 1 tbsp maple syrup
β¦ 1 tbsp lemon juice
β¦ 1 tsp ground cinnamon
Cookies
β¦ 1 /2 cup coconut oil, melted
β¦ 1/2 cup brown sugar
β¦ 1 1/4 cup gluten-free flour blend
β¦ 3/4 cup rolled oats
β¦ 1/4 cup walnuts, chopped
β¦ 2 tsp ground cinnamon
β¦ 1 tsp baking powder
β¦ 1/4 tsp sea salt
INSTRUCTIONS
1. Preheat the oven to 350F.
2. In a small bowl, mix the flaxseeds with water. Let it sit for a couple of minutes to thicken.
3. In a small pot, add all the ingredients for the caramelized apple and cook on low-medium heat for about 5-10 minutes. Set aside.
4. In a small bowl, whisk together the coconut oil, brown sugar and the flaxseed egg until combined.
5. In a large bowl, add all the dry ingredients, the caramelized apple and the wet mixture. Mix with a spoon until well combined.
6. With an icecream scooper, scoop up 8 balls and place them on a large baking tray. Flatten down the cookie dough balls with your hands or a spoon.
7. Bake in the center of the oven for 20-25 minutes or until the botton and the sides are slightly golden. Let it cool for at least 10 minutes.
