INGREDIENTS

β—¦ 5 tbsp water
β—¦ 2 tbsp flaxseed meal

β—¦ 1 cup pumpkin puree
β—¦ 1/2 cup cane sugar
β—¦ 1/4 cup coconut oil, melted
β—¦ 1 tsp vanilla extract

β—¦ 1 cup gluten-free flour
β—¦ 3/4 cup almond flour
β—¦ 1/3 cup protein powder
β—¦ 2 tsp pumpkin spice
β—¦ 2 tsp baking soda
β—¦ 1 tsp ground cinnamon
β—¦ 1 tsp baking powder
β—¦ 1/4 tsp salt

Toppings
β—¦ Chopped pecans
β—¦ Roasted pumpkin seeds

INSTRUCTIONS

1. Preheat the oven to 350F.

2. In a small bowl, mix the flaxseed meal with water. Let thicken for 5 minutes.

3. Grease 1 muffin pan with coconut oil or line with parchment baking cups. Set aside.

4. In a large bowl, add the wet ingredients and whisk for 1-2 minutes.

5. Add the rest of the ingredients except the toppings and mix with a spoon until well combined.

6. With an icecream scooper, pour the batter in each muffin hole on the pan. Top with pecans and pumpkin seeds.

8. Bake for 30 minutes. Let it cool for 5-10 minutes.
