Chocolate Chip Cookies (Vegan & Gluten-free)

Indulge in the perfect blend of rich chocolate and wholesome goodness with these delicious vegan and gluten-free chocolate chip cookies. They are soft and chewy, so this recipe is sure to satisfy your sweet tooth!

INGREDIENTS
β¦ 2 tbsp water
β¦ 1 tbsp ground flaxseeds
β¦ 1 cup packed brown sugar
β¦ 1/2 cup + 2 tbsp vegan butter
β¦ 1 tsp vanilla extract
β¦ 1 1/2 cup gluten-free flour blend
β¦ 2 tsp arrowroot starch
β¦ 1 tsp baking soda
β¦ 1/4 tsp salt
β¦ 1 cup dark chocolate, grossely chopped
INSTRUCTIONS
1. Preheat oven to 350F.
2. In a small bowl, mix the flaxseeds with water. Let it sit for a couple of minutes to thicken. Set aside.
3. In a large bowl, add the butter and the brown sugar and mix with an electric mixer at high speed for 1-2 minutes until you get a creamy consistency.
4. Add the flaxseed egg and vanilla extract. Mix on medium speed with the mixer.
5. Add the dry ingredients (except the chocolate chuncks) and mix on low-medium speed with the mixer until everything is well combined.
6. Add the chocolate chuncks and combine with a spatula.
7. With a spoon, scoop the dough and form medium balls with your hands. Place on a baking tray with 1-2 inch between each dough ball.
7. Bake in the center of the oven for about 17 minutes, then let it cool for at least 10 minutes.
