Crispy Bean Sweet Potato Hummus Quinoa Bowl (low FODMAP)

INGREDIENTS
◦ 2 cups sweet potatoes, roughly chopped
◦ 1 1/4 cup white cannellini beans, drained, rinsed and patted dry
◦ 1 tbsp avocado oil
◦ Pinch of: paprika, black pepper and salt
◦ 2 cups spinach, chopped
◦ 2 cups cooked quinoa
◦ 1 cup cucumber, chopped
◦ 1 cup low FODMAP Hummus
◦ 4 tbsp hemp seeds
◦ 4 tbsp sunflower seeds
Avocado dressing
◦ 1 avocado
◦ 3-4 tbsp olive oil
◦ 2 tbsp egg-free mayonnaise
◦ 2 tbsp lemon juice
◦ Fresh parsley and basil
◦ Salt & black pepper to taste
INSTRUCTIONS
1. Preheat the oven to 425F.
2. In a large baking tray, add the sweet potatoes and the white beans. Add the oil and spices. Mix well until everything is well coated.
3. Cook for about 30 minutes or until the beans are crispy.
4. In a blender, add the ingredients for the dressing and blend until smooth. Set aside.
5. In 4 containers, add 1/4 cup of hummus, 1/2 cup of spinach, 1/2 cup quinoa, 1/2 cup sweet potatoes, 1/4 cup cucumber, 1/3 cup white beans, and 1 tbsp of hemp and sunflower seeds. Top with 2 tbsp of the avocado dressing.
Refrigerate up to 4-5 days.
