Herby Lemon Jalapeño Tofu Spread (low FODMAP)

Spice up your snack game with this Herby Lemon Jalapeño Tofu Spread—a zesty, creamy blend that packs a punch of fresh herbs and a spicy kick. Perfect for spreading on toast, sandwiches, or as a dip for veggies!

INGREDIENTS
◦ 1 bloc 400g firm tofu, drained and rinsed
◦ 1 1/2 cup fresh parsley
◦ 1 1/2 cup fresh coriander
◦ 1/2 cup extra virgin olive oil
◦ 1/4 cup pickled jalapeño (or more for extra spiciness)
◦ Juice of 1 lemon
◦ 3 tbsp nutritionnal yeast
◦ 2 tbsp hemp seeds
◦ 2 tbsp sunflower seeds
◦ 2 tbsp apple cider vinegar
◦ 1/4 tsp salt
◦ 1/4 tsp black pepper
◦ Water to thin (optional)
◦ Toppings: chopped cherry tomatoes (max 5 per serving), fresh coriander, sunflower seeds and olive oil.
INSTRUCTIONS
1. In a blender, combine all ingredients, except the toppings, and blend until smooth. You might have to scrape the sides.
2. When ready to serve, top with the tomatoes, coriander, sunflower seeds and a drizzle of olive oil. Serve with veggies, crackers or on toast.
Refrigerate up to 7 days.
