Refresh your taste buds with the Tofu Mango Poke Bowl—a vibrant blend of creamy tofu and juicy mango topped with a burst of healthy probiotics. This bowl not only tantalizes with its tropical flavors but also supports your gut health in every bite.

INGREDIENTS

Spicy tofu
◦ 3/4 cup extra firm tofu, cubed
◦ 1 tbsp virgin olive oil
◦ 1 tbsp tamari sauce
◦ 1 tbsp maple syrup
◦ 1 tsp sriracha
◦ Pinch of: black pepper, ground ginger and dried parsley

Bowl
◦ 1/2 cup sushi rice, cooked
◦ 1/3 cup edamame, cooked
◦ 1/4 cup carrot, cut in julienne
◦ 1/4 cup cucumber, chopped
◦ 3 tbsp avocado, chopped

Toppings
◦ Vegan spicy mayonnaise ( 1-2 tbsp mayonnaise + 1 tsp sriracha)
◦ 2 tbsp kimchi
◦ Nori sheets, chopped (no more than 2 big sheets, about 5g)
◦ 1 tbsp toasted sesame seeds

INSTRUCTIONS

1. In a small pan, add all the ingredients for the spicy tofu. Cook until all liquid has evaporated and golden.

2. Add all the ingredients for the poke in a bowl, add the cooked tofu and top with the toppings of your choice.
