Roasted Cauliflower & Chickpea Quinoa Salad with lemon tahini dressing

Elevate your salad game with our Roasted Cauliflower & Chickpea Quinoa Salad, drizzled with zesty lemon tahini dressing. This vibrant bowl of roasted goodness and protein-packed quinoa offers a deliciously nutritious twist on your everyday greens.

INGREDIENTS
◦ 2 cups cauliflower, chopped in florets
◦ 2 sweet potatoes, chopped
◦ 2 cans 19oz chickpeas, drained, rinsed and pat dried
◦ 1 tbsp avocado oil
◦ 2 tbsp nutritionnal yeast
◦ 1 tbsp paprika
◦ 1 tbsp dried parsley
◦ 1 tbsp dried basil
◦ 1 tsp garlic powder
◦ 1/2 tsp black pepper
◦ 1/2 tsp salt
◦ 2-3 cups mixed leafy greens
◦ 2 cups quinoa, cooked
◦ 4 mini cucumbers, chopped
◦ 2 big carrots, cut in julienne
◦ 1/3 cup pumpkin seeds
Lemon tahini dressing
◦ 1/2 cup vegan mayonnaise or vegan plain yogurt
◦ 4 tbsp tahini
◦ Juice of 1 lemon
◦ 2 tsp garlic, minced
INSTRUCTIONS
1. Preheat the oven to 400F.
2. In a large baking tray, add the cauliflower, sweet potatoes, chickpeas, oil and spices. Mix until everything is well coated.
3. Bake for 30-35 minutes.
4. In the meantime, mix all the ingredients for the dressing in a mason jar with a spoon. Set aside.
5. In a large salad bowl, add the leafy greens, quinoa, carrots, cucumbers and the roasted veggies and chickpeas.
6. Top with pumpkin seeds. Pour the dressing once you are ready to eat it.
Refrigerate up to 4 days.
