Smoky Crispy Chickpea Salad with Garlic tahini dressing

Indulge in the vibrant crunch of Smoky Crispy Chickpea Salad drizzled with creamy garlic tahini dressing—a fusion of bold flavors and textures that turns every bite into a satisfying, healthful delight.

INGREDIENTS
Crispy Chickpeas
◦ 2 cans 19oz chickpeas, drained, rinsed and pat dried
◦ 1 tbsp avocado oil
◦ 1/2 tsp smoked paprika
◦ Pinch of: salt, black pepper, garlic powder, onion powder, dried parsley and paprika
Salad
◦ 4 cups spinach, grossely chopped
◦ 4 mini cucumbers, chopped
◦ 4 cups red cabbage, thinely sliced
◦ 4 small carrots, cut in julienne
◦ 1 1/3 cup mixed nuts, unsalted
◦ 4 tbsp hemp seeds
Dressing
◦ 1 cup vegan mayonnaise or dairy-free yogurt
◦ 4 tbsp tahini
◦ Juice of 1 lemon
◦ 1/2 cup water (or more to lighten consistency)
◦ Seasonings: pinch of salt, black pepper, onion powder, garlic powder, dried oregano, dried basil and fresh parsley
INSTRUCTIONS
1. Preheat oven to 400F.
2. On a baking tray, add the chickpeas, oil and seasonings. Mix until everything is well coated.
3. Bake for about 30 minutes. Set aside.
4. In a jar, add all the ingredients for the dressing and mix well. Set aside.
5. In 4 bowls or containers, add 1 cup of spinach, 1 cucumber, 1 cup red cabbage, 1 carrot, 1/3 cup nuts, 1 cup of crispy chickpeas and 1 tbsp of hemp seeds.
6. Top with the dressing once you are ready to serve.
Refrigerate up to 4 days.
