Warm Roasted Veggies Quinoa Salad with lemon tahini dressing

Warm up your taste buds with my Roasted Veggies Quinoa Salad, perfectly seasoned and tossed with a zesty lemon tahini dressing. This nourishing bowl is a delightful blend of hearty flavors and vibrant textures, making every bite a wholesome indulgence.

INGREDIENTS
Salad
◦ 3 cups brussel sprouts, chopped
◦ 2 cups broccoli, chopped
◦ 2 sweet potatoes, chopped
◦ 1 tbsp avocado oil
◦ Seasonings: salt, black pepper, paprika, garlic powder, dried parsley, dried basil and dried oregano
◦ 1 1/2 cup quinoa, cooked
◦ 1 1/2 cup kale, chopped and massaged with olive oil
◦ 1 can 19oz chickpeas, drained and rinsed
◦ 3/4 cup walnuts, chopped
Lemon tahini dressing
◦ 1/2 cup vegan mayonnaise or vegan plain yogurt
◦ 4 tbsp tahini
◦ Juice of 1 lemon
◦ 2 tsp garlic, minced
INSTRUCTIONS
1. Preheat the oven to 425F.
2. In a baking tray, add the brussel sprouts, sweet potatoes, brocoli, oil and seasonings. Mix until everything is coated. Bake for about 30 minutes.
3. Meanwhile, in a jar, add all the ingredients for the dressing and mix well.
4. In each bowl, add 1/2 cup of cooked quinoa, 1/2 cup kale, the roasted veggies, 1/4 cup walnuts and 3/4 cups chickpeas.
5. Top with the lemon tahini dressing once you are ready to serve.
Refrigerate up to 4-5 days.
