Refresh your taste buds with the Tofu Mango Poke Bowl—a vibrant blend of creamy tofu and juicy mango topped with a burst of healthy probiotics. This bowl not only tantalizes with its tropical flavors but also supports your gut health in every bite.

INGREDIENTS

Spicy tofu
◦ 3/4 cup extra firm tofu, cubed
◦ 1 tbsp virgin olive oil
◦ 1 tbsp tamari sauce
◦ 1 tbsp maple syrup
◦ 1 tsp sriracha
◦ Pinch of: black pepper, ground ginger, garlic powder and dried parsley

Bowl
◦ 1/2 cup sushi rice, cooked
◦ 1/3 cup edamame, cooked
◦ 1/4 cup carrot, cut in julienne
◦ 1/4 cup fresh mango, chopped
◦ 1 mini cucumber, chopped
◦ 1/2 avocado

Toppings
◦ 2-3 tbsp vegan spicy mayonnaise
◦ 2 tbsp Kimchi
◦ Nori sheets, chopped
◦ Toasted sesame seeds
◦ Pickled ginger (optional)

INSTRUCTIONS

1. In a small pan, add all the ingredients for the spicy tofu. Cook until all liquid has evaporated and golden.

2. Add all the ingredients for the poke in a bowl, add the cooked tofu and top with the toppings of your choice.
