Elevate your weeknight dinners with this vibrant Coconut Red Curry Tofu Stir-Fry. Packed with creamy coconut milk, aromatic red curry paste, and crisp vegetables, it's a flavorful and satisfying dish that’s both vegan and irresistibly delicious.

INGREDIENTS
Coconut Red Curry Sauce
◦ 1 tsp toasted sesame oil
◦ 1 tbsp garlic, minced
◦ 1/2 tsp ground ginger
◦ 1 can 14oz of coconut milk (the solid part only)
◦ 1/4 cup cooking soy preparation
◦ 3 tbsp tamari sauce
◦ 2 tbsp red curry paste
Tofu Stir-Fry
◦ 2 1/2 cups rice noodles, cooked
◦ 1 bloc 454g of extra firm tofu, shredded into chunks
◦ 1 red bell pepper, cut into strips
◦ 3 carrots, chopped
◦ 2 brocoli crowns, chopped
◦ Pinch of dried parlsey and black pepper
◦ Toasted sesame seeds
INSTRUCTIONS
1. In a large pan, heat the sesame oil, then add the garlic and ginger powder. Cook until lightly golden.
2. Add the rest of the ingredients for the coconut red curry sauce. Mix well and let simmer for 5-8 minutes. Pour the sauce in a cup and set aside.
3. In the same pan, add the tofu, veggies, parlsey and black pepper. Cook for 5 minutes, then add the coconut red curry sauce.
4. Mix until all combined, then let it simmer on low-medium heat for at least 15 minutes.
5. Serve with rice noodles or rice and sprinkle with the toasted sesame seeds.
