Indulge in the perfect blend of flavors with Fresh Roasted Veggies on Tofu Spread—a vibrant, savory dish where tender roasted vegetables meet a creamy, protein-packed tofu base for a satisfying and nutritious delight.

INGREDIENTS

◦ 4 cups small potatoes, chopped
◦ 3 1/2 cups broccoli, chopped
◦ 2 cups asparagus, chopped
◦ 4 carrots, pealed and chopped
◦ 2 zucchinis, chopped
◦ 1 tbsp avocado oil
◦ Pinch of: dried parsley, dried oregano, dried basil, garlic powder, paprika, salt and black pepper.

Tofu spread
◦ 300g firm tofu, drained and rinsed
◦ Juice 1 1/2 lemon
◦ 3 tbsp plant milk
◦ 3 tsp za’atar seasoning
◦ 1 tsp dijon mustard
◦ 1 tsp nutritionnal yeast
◦ 1 tsp paprika
◦ 1/2 tsp salt
◦ 1/2 tsp black pepper

◦ 2 cups Crispy Chickpeas

INSTRUCTIONS

1. Preheat the oven to 425F.

2. In 2 baking trays, add all the veggies, the oil and the seasonings. Mix until everything is coated.

3. Bake for 40-45 minutes, or until veggies are cooked.

4. In a blender, add the ingredients for the tofu spread and mix until you get a smooth texture. Set aside.

5. Serve the baked veggies on the tofu spread and top with crispy chickpeas.
