Refreshing Mango-Avocado Bean Tortillas with fresh coleslaw

Enjoy a burst of flavor with my Refreshing Mango-Avocado Bean Tortillas, paired with crisp, homemade coleslaw. This vibrant, nutrient-packed dish is perfect for a light, satisfying meal that’s as delicious as it is refreshing!

INGREDIENTS

Mango-Avacdo Bean Salad
◦ 2 cans 19oz black beans, drained and rinsed
◦ 2 cans whole kernel corn, drained and rinsed
◦ 3 avocados, sliced
◦ 2 bell peppers, chopped into cubes
◦ 2 red onions, chopped finely
◦ 2-3 yellow mangos, ripe, choppe into cubes
◦ Handful fresh coriander, chopped (+more for topping)
◦ Handful fresh parsley, chopped

Dressing
◦ 1/2 cup extra virgin olive oil
◦ 1 tbsp rice vinegar
◦ Juice of 1/2 lemon
◦ Pinch of celtic salt, black pepper, chili powder and garlic powder

Fresh coleslaw
◦ 4 cups red cabbage, chopped finely
◦ Juice 1/2 lemon juice
◦ Pinch of celtic salt

◦ 24 corn tortillas (soft)
◦ 1 tsp avocado oil

◦ Pickled jalapeños, chopped (optional)

INSTRUCTIONS

1. In a large bowl, combine the beans, corn, vegetables, mangos and fresh herbs.

2. In a jar, combine the ingredients for the dressing and mix well.

3. Pour the dressing into the salad. Mix well with a spoon. Set aside.

4. In a bowl, add the ingredients for the coleslaw and massage. Set aside.

5. In a large pan on medium-high heat, add the oil. Once heated, add the corn tortillas. Cook each side a few minutes until lightly golden.

6. Assemble the tortillas, by adding about 3/4 cup of the salad on the tortillas, topping off with the coleslaw, fresh coriander and pickled jalapeños.

Refrigerate the salad up to 3 days.
