Lentil & TVP Sheperd’s Pie

Savor the ultimate cozy dish with my Lentil and PVT Shepherd’s Pie—a delectable blend of savory lentils and savory TVP topped with a velvety mash, offering a delightful twist on a classic favorite.

INGREDIENTS
Mashed potatoes
◦ 4 cups yellow potatoes, pealed and grossly cubed
◦ 3 tbsp plant milk
◦ 1 tbsp vegan butter
◦ Pinch of salt, black pepper, dried parsley and garlic powder
Lentil & TVP Filling
◦ 1 tbsp avocado oil
◦ 1/2 yellow onion, chopped
◦ 1 tbsp garlic, minced
◦ 1 can of 19oz brown lentils, drained and rinsed
◦ 1 cup of textured vegetable protein (TVP), dry
◦ 1 cup water
◦ 1 tbsp tamari sauce
◦ 2 tbsp nutritionnal yeast
◦ Pinch of salt, black pepper, paprika, dried basil, dried oregano and dried parsley
◦ 1 can of 14oz cream style corn
INSTRUCTIONS
1. In a big pot, fill with water and add the chopped potatoes. Bring to a boil, then reduce the heat to medium and boil for 15 minutes.
2. Once cooked, strain the water while keeping a little bit (1/4-1/2 cup). Then add all your ingredients for the mashed potatoes and mash the potatoes until all combined and smooth. Set aside.
3. Preheat oven to 190 °C (375 °F).
4. In a large pan on high heat, add the oil. When sizzling, add the onion and garlic. Cook for 1-2 minutes then add the lentils, TVP and water. Stir to let it absorb the water.
5. Add the tamari sauce, nutritonnal yeast and spices. Cook for 2-3 minutes.
6. In an 8x8 baking dish, add the filling at the bottom, then add the cream style corn. Add the mashed potatoes on top. Optional: Sprinkle with dried parsley and paprika.
7. Bake for 23 minutes, then broil on high for 2-3 minutes or until golden brown.
8. Split into 4 servings. Can be served immediatly or be frozen up to 6 months.
