INGREDIENTS
Spicy Maple Tofu
◦ 4 cups exta-firm tofu, cubed
◦ 4 tbsp maple syrup
◦ 2 tbsp tamari sauce
◦ 1 tbsp tahini
◦ 1 tbsp sriracha
◦ 1 tbsp minced garlic
Sheet pan
◦ 1 broccoli crown, chopped
◦ 2 zuchinis, chopped
◦ 1 carrot, chopped
◦ 1 cup turnip, chopped
◦ 1/2 onion, chopped
◦ Avocado oil spray
◦ Pinch of: nutritionnal yeast, salt and black pepper
◦ 2 cups grain of choice (quinoa, rice, couscous, etc.), cooked
INSTRUCTIONS
1. Preheat the oven to 400F.
2. In a jar, add all the ingredients for the sauce and mix until combined. Set aside.
3. In a bowl, add the tofu and the sauce. Mix until the tofu is well coated.
4. On a large baking tray, add the tofu and the veggies. Season the vegetables with 1-2 sprays of avocado oil and the spices. Mix until everything is well coated.
4. Bake for about 25-30 minutes or until the tofu is slighty crispy and golden.
5. In 4 bowls, add 1/2 cup of cooked grain, 1 cup of tofu and the cooked veggies. Top with toasted sesame seeds (optional).
Refrigerate up to 4-5 days.
