Fresh Herby Lemon Pasta

Brighten your meal with my Fresh Herby Lemon Pasta—light, flavorful, and bursting with fresh herbs and tangy lemon, it’s a refreshing dish that’s perfect for any day of the week!

INGREDIENTS

Herby Lemon Sauce
◦ 1 box 346g silken tofu
◦ 5 tbsp nutritionnal yeast
◦ 1/4 cup fresh parsley
◦ Juice 1 lemon
◦ 1 tsp lemon zest
◦ Pinch of: salt, black pepper, garlic powder

◦ 170g gluten-free linguine pasta
◦ 2-3 cups spinach
◦ 1/2 onion, chopped
◦ 1 tsp avocado oil
◦ Fresh basil, chopped

INSTRUCTIONS

1. In a medium pot, boil some water, then add the pasta and cook according to the instructions on the box.

2. In a blender, add the ingredients for the sauce, blend until smooth. Set aside.

3. In a pan, heat up the oil. Add the onion and cook for about 2 minutes or until slightly golden.

4. Add the spinach and the sauce. Stir until combined.

5. Add the cooked pasta with about 1/4-1/2 cup of the pasta water. Top with fresh basil

6. Serve immediatly, add extra nutritionnal yeast and fresh basil.
