INGREDIENTS
Meatless Taco Meat
◦ 1/2 cup Textured Vegetable Protein (TVP), dry
◦ 1/2 cup water
◦ 1 tsp chili powder
◦ 1/2 tsp paprika
◦ 1/4 tsp cumin
◦ 1/4 tsp salt
◦ 1/4 tsp black pepper
◦ 1/4 tsp garlic powder
◦ 1/4 tsp onion powder
◦ 1/4 tsp dried oregano
Tacos
◦ 6 gluten-free taco shells
◦ 1 cup cooked black beans, mashed
◦ Mixed greens
◦ 2 avocados, sliced
◦ Mild salsa
◦ Pickled red onions
◦ Fresh cilantro, chopped
INSTRUCTIONS
1. In a small pot on medium-high heat, add the TVP, water and the spices for the taco meat. Cook for 5 minutes. Set aside.
2. In each taco shell, add about 4 tablespoons of the mashed black beans.
3. Add the leafy greens, taco meat and avocado.
4. Top with salsa, pickled red onion and fresh cilantro.
