Spicy Olive Pizza (Gf & Vegan)

Turn up the heat with my Spicy Olive Pizza—gluten-free and vegan, this fiery creation is a bold twist on a classic that’s sure to spice up your pizza nights!

 
 

🍽 Servings: 8 slices 🕓 Prep Time: 10 mins 🕓 Cook Time: 30 mins

 

INGREDIENTS

◦ 1 gluten-free pizza dough
◦ 1/2 cup marinara sauce
◦ 1/2 cup green olives, pitted and cut in half
◦ 1/2 cup vegan mozzarella cheese, sliced thinely
◦ 1/2 cup spinach and arugula
◦ 1/4 cup spicy pickled eggplant
◦ 2 garlic cloves, chopped
◦ Fresh basil leaves
◦ Pinch of salt, black pepper, dried basil, dried oregano and chili flakes
◦ Vegan homemade ricotta (see recipe below)

Cashew ricotta
◦ 1/2 cup raw cashews, soaked overnight
◦ 1 tbsp plant milk, or more to make it smooth
◦ Juice of 1/2 lemon
◦ 1 tbsp of nutritional yeast
◦ 1/2 tsp of garlic powder
◦ Pinch of : Salt, black pepper, dried basil, dried parsley and dried oregano.

INSTRUCTIONS

Cashew ricotta
1. Soak the cashews overnight or boil them for 10-15 minutes. Strain the water and rinse.

2. In a blender, add the cashews and the rest of the ingredients and mix until a smooth texture. Set aside.

Pizza
1. Preheat oven to 350F.

2. In a baking tray, drizzle a little bit of oil and spread evenely.

3. Spread the pizza dough directly on the baking tray.

4. Add the tomato sauce and spread evenely, then add the garlic and the seasonings.

5. Add the rest of the ingredients.

6. Bake for at least 30 minutes, or until the crust is golden and the cheese has melted.

7. Cut into desired size.

8. (Optional) Add more fresh arugula and fresh basil leaves.
