Tofu Sushi Sandwich

Discover a fresh twist on a classic favorite with my Tofu Sushi Sandwich—a fusion of vibrant flavors and satisfying textures that turns sushi into a handheld delight. Perfect for a quick, delicious, and unique meal on the go!

 
 

🍽 Servings: 1 🕓 Prep Time: 5 mins 🕓 Cook Time: 15 mins

 

INGREDIENTS

◦ 2/3 cup calrose rice, cooked and seasoned with rice vinegar and toasted sesame oil
◦ 2 nori sheets
◦ 4 tbsp vegan spicy mayonnaise
◦ 1 green onion, chopped
◦ 2 slices 0.5inch thick extra firm tofu
◦ 1 tbsp extra virgin olive oil
◦ 1 tbsp tamari sauce
◦ 1/2 avocado, sliced
◦ 1/2 mini cucumber, sliced
◦ Pinch of toasted sesame seeds
◦ Optional: pickled ginger

INSTRUCTIONS

1. In a small pan, heat up the oil. Add the tofu slices. Cook for 1 minute, then add the tamari sauce.

2. Cook for 3 minutes each side (or until golden brown with no liquid left). Set aside.

3. On the nori sheet (not the shiny side), add 1/3 cup of rice in the center and form a square shape.

4. Add the spicy mayonnaise, green onion, cooked tofu, cucumber, avocado and toasted sesame seeds.

5. Top it off with 1/3 cup of rice, forming a square.

6. Cut a 4x4 inch square into another nori sheet. Put on top of the rice. This will help close the sandwich.

7. Take a small pinch of rice and smush it all around the border of the sheet. This will act as glue.

8. Fold each side and make sure everything sticks together.

9. Cut in half, serve alone, with pickled ginger or tamari sauce.
