Edamame Avocado Toast

Elevate your breakfast game with this vibrant Edamame Avocado Toast. Combining creamy avocado with protein-packed edamame, this recipe offers a deliciously fresh twist on a classic favorite.

 
 

🍽 Servings: 2 🕓 Prep Time: 5 mins 🕓 Cook Time: 2 mins

 

INGREDIENTS

◦ 1 1/2 cup edamame, frozen
◦ 1 avocado
◦ Juice 1/2 lemon
◦ Handful fresh parsley
◦ 1 tbsp tahini
◦ Pinch of salt, black pepper and cayenne pepper

◦ 1/4 cup cherry tomatoes, chopped
◦ 2 slices bread of choice, toasted

INSTRUCTIONS

1. In a bowl, add the edamame, fill with water, cover and cook in the microwave for 2 minutes.

2. In a blender, add all the ingredients (except the tomatoes and bread) and blend at least for 1 minute until everything is well combined.

2. Add about 1/3-1/2 cup of the mixture on each toast, top with tomatoes and more fresh parlsey. Serve immedialty, enjoy!

Refrigerate up to 3 days.
