Veggie Tofu Scramble

Transform your breakfast routine with my Veggie Tofu Scramble—a vibrant, protein-packed dish bursting with colorful vegetables and savory spices, delivering a deliciously hearty and nutritious start to your day.

INGREDIENTS
◦ 1 tsp avocado oil
◦ 1/2 yellow onion, finely chopped
◦ 1/3 cup tomatoes, chopped
◦ 1/4 cup mushrooms, chopped
◦ 140g extra-firm tofu, drained and rinsed
◦ 1 tbsp nutritionnal yeast
◦ 1 tbsp dried parsley
◦ 1/2 tsp ground turmeric
◦ 1/4 tsp paprika
◦ 1/4 tsp black pepper
◦ 1/8 tsp ground cumin
◦ 1-2 tbsp water
◦ Salt to taste
◦ Handful dark leafy greens of choice (spinach, kale…)
INSTRUCTIONS
1. In a pan on medium-high heat, add the oil, onion, tomatoes and mushrooms. Cook for about 2-3 minutes.
2. Wrap the tofu in some paper towel and press to get rid of the excess water. Then scramble it with your hands directly in the pan. Cook for 1-2 minutes.
3. In a small bowl, mix all the spices and water, then add it to the tofu. Mix until combined. Cook for another 2 minutes.
4. Add the leafy greens and cook for 1 minute. Serve with toast. Can be served with 1/2 avocado and sriracha.
