Elevate your meatball game with my Lentil TVP Meatballs—packed with hearty lentils and savory TVP for a protein-rich, flavor-packed twist on a classic favorite. Perfectly crisp on the outside and tender on the inside, these meatballs are a game-changer for any meal!

INGREDIENTS

◦ 1 cup textured vegetable protein, dry
◦ 3/4 cup vegetable broth low in sodium, heated

◦ 1 can 19oz lentils, drained and rinsed
◦ 1 cup gluten-free flour
◦ 1/2 cup gluten-free breadcrumbs
◦ 2 tbsp flaxseed meal + 4 tbsp water
◦ 1/2 yellow onion
◦ 2 garlic cloves
◦ 1 tbsp tamari sauce
◦ 1 tbsp nutritionnal yeast
◦ 1 tbsp dried parsley
◦ 1 tbsp dried basil
◦ 1 tsp paprika
◦ 1/2 tsp cumin
◦ 1/2 tsp salt
◦ 1/2 tsp black pepper

INSTRUCTIONS

1. Preheat the oven to 400F.

2. In a small bowl, hydrate the textured vegetable protein with the hot vegetable broth. Set aside.

3. In a small bowl, mix your ground flaxseed with water. Let it sit for at least 3 minutes.

4. In a food processor, mix all the ingredients together.

5. Scoop about a spoonful of the mixture and form a ball with your hands.

6. Add the balls on a baking tray and cook for 30 minutes. Let it cool.
