Rice Paper Tofu Spring Rolls

Roll into freshness with our Rice Paper Tofu Spring Rolls—an explosion of vibrant veggies and savory tofu wrapped in delicate rice paper. Perfectly light, refreshingly crisp, and packed with flavor in every bite!

INGREDIENTS

◦ 1 tbsp extra virgin olive oil
◦ 3 green onions, chopped
◦ 1 tbsp minced garlic
◦ 1 bloc extra firm tofu, crumbled
◦ 1 bag 12oz coleslaw mix
◦ 2 tbsp tamari sauce
◦ 1 tsp brown miso
◦ Pinch of black pepper and dried parsley

◦ 3 tbsp extra virgin olive oil
◦ 20 rice paper sheets

◦ Sweet chili sauce

INSTRUCTIONS

1. In a large pan on medium-high heat, add the oil. When it’s hot, add the green onions and garlic. Cook for about 2 minutes.

2. Add the crumbled tofu, coleslaw, tamari sauce, miso and seasonings. Cook until the veggies are soft (about 5 minutes). Set aside to cool.

3. Dip the rice paper in warm water, place on a cutting board, then add about 1/3 cup of the tofu mixture. Roll the left and right side, then roll from the bottom to the top.

4. Repeat step 3 with another layer so they hold better together.

5. In the same pan, heat up the oil. Once heated, add the spring rolls. Cook until each sides are golden and crispy.

6. Once they are ready, place them on paper towels to soak up any excess oil.

7. Serve with a sweet chili sauce.
