Healthy Creamy Protein Chocolate Pudding

Indulge in chocolate bliss with my Healthy Creamy Protein Chocolate Pudding—smooth, rich, and packed with protein. This decadent treat blends indulgence with nourishment for a snack that's both delicious and nutritious.

INGREDIENTS

◦ 150g dark chocolate 85% (about 5 squares)
◦ 1 tsp coconut oil

◦ 1 box of 346g silken soft tofu
◦ 1/4 cup cocoa powder
◦ 3 tbsp pure maple syrup
◦ 3 tbsp water
◦ 3 Medjool dates, pitted
◦ 1 tsp vanilla extract
◦ 1/2 ground cinnamon
◦ 1/4 tsp celtic salt

INSTRUCTIONS

1. Boil some water and in a small bowl cover the dates. Let soak for 5 minutes.

2. In a small bowl, put the chocolate and coconut oil and microwave for about 30 seconds to 1 minute. Set aside to cool.

3. In a blender, add the silken tofu and water. Blend until smooth.

4. Add the cocoa powder, maple syrup, cinnamon, salt and the drained dates. Blend until combined.

5. Add you melted chocolate and blend until combined.

6. Pour into 4 small mason jars and refrigerate for at least 1 hour.

7. Top with chocolate shaves and coconut flakes.
Refrigerate up to 5 days.
